Easter Eggs

I need suggestions on what to do with the 60 eggs I just cooked for Easter.
Beside the 5 that cracked (breakfast) and the dozen that will be for deviled tomorrow, the 5 in the potato salad, some for the dogs, that leaves me with a whole sh_t left over.
I used to just pitch them, but with the tight budget we have it may be necessary to come up with ingenious ways to feed the masses.
I don't leave them out all night, but hide them in the morning and back in the fridge they go. Left them out one night and the dogs and cats had shells and eggs all over the f'in place.
Tight budget calls for simplicity and whats on sale.

Listen to your chef

Kev's right. Egg Salad is my mainstay after Easter.

When I was a kid, we used to poke holes and blow out the eggs (I was the fifth of six kids, so we had a lot of eggs, too). But I would get sick of scrambled eggs for the next three months or so.

Egg Salad Sandwiches, Bellyman, Egg Salad Sandwiches 'til you drop. (I haven't had the need to freeze portions, but maybe you could try that.)

no go on salad

Thats a no go on the salad. The only people that like it are the wif andme, an' Im on a diet starting monday.
We used to blow out the eggs and put jello in them when I was a kid. It is a great idea thaat I forgot about, but the eggs are already cooked. Also wouldn't the shells be a little fragile.
Creativity is not forcoming.

Deviled eggs are good. Kids usually like them.

I seem to recall that there is a good breakfast casserole recipe that calls for hardboiled eggs. I would ask chef, but chefs don't do casseroles.

Slice into salads

That's the only other way I take 'em, other than deviled. Can't stand egg salad sandwiches.

MMMMM casserole

egg and shrimp cass? with fontina cheese ( for backpackingdad )
I love casserole. Look up cassoulet ( duck and white bean ) http://en.wikipedia.org/wiki/Cassoulet

your going on a diet, so remove all the yolks and you are left with pure protein with very little fat.
you can also put them in a solution of 1/2 beet juice and pickle juice for a nice way to eat and preserve.

cooked egg products are a tough thing to utilize so good luck......

chop eggs, onions, mayo and relish, salt and pepper

other than that you can poke holes in both ends an blow the egg out and then use the shells for the hunt?

then you can make a really big omelet!

Bacon, Egg & Potato Casserole

From http://www.cooks.com:

"This is a recipe I have been cooking for years, and is an all time family favourite! This is so easy, the ingredients will just depend on what dish you use."

6 large potatoes
6 boiled eggs
300gm diced bacon or about 5 rashers bacon
3 tbsp butter or marg
7 tbsp flour (any sort)
breadcrumbs, for sprinkling (optional)
2 cups milk

Basically all we do is: Peel the potatoes and boil until all but done; cool and slice.
Boil the eggs, cool and slice. Fry the diced bacon or bacon pieces.

In a casserole dish, layer the sliced potatoes, sliced boiled eggs, and then the bacon.

When finished, prepare a white sauce and pour over dish, then sprinkle some breadcrumbs on the top, if desired. Cook in oven for about 30mins at about 375-400°F (200C).

My (JPhillip's) opinion: This recipe needs cheese. Maybe some broccoli and onion as well.

I scanned the recipe and that's what I thought, what no cheese? It's gotta have cheese, JP!
Most cooked Breakfast foods are just better with cheese!
So I paged down to reply and that C word caught my eye (outa the gutter guys!)

flour + marg = roux = thix agent + hot milk = white sauce ( Bechamel to be exact { which is one of the five mother sauces} Can you name the other four? Not just JP, anybody?

Hollandaise
I already had a potato dish that I liked from a friend. As with all dishes I like to add something to make it my own and the broccoli I think will do the trick. It already has lots of cheese.
Curry? Interesting!
20 eggs left. Lost a few when coloring, they ate them. May have lost my BEARS shirt. The girls like to wear my shirts for pj's and the 4 year old was wearing that shirt when we were coloring eggs. I think I can get out the stain with shout.

I've got Google

Veloute - Stock thickened with roux
Bechamel - Milk thickened with roux
Tomato - Self explanatory
Espagnole - Brown sauce, made with roux, veal stock, roasted veal bones and mire poix
Hollandaise - Heated egg yolk and clarified butter

Not that I know what they are. :-)

Try white vinegar first

If that doesn't work go to the queen of clean web site and ask her a question. DON"T LET IT GO IN THE DRYER IT WILL SET THE STAIN!!!!!!!
