Description
A deceptively healthy and very tasty breakfast that any food throwing, green bean spitting toddler with go berserk over. Adjust ingredient portions to taste and need.
Ingredients
- 1⁄2 c frozen organic blueberries
- 1⁄2 c frozen organic rasberries
- 1 banana
- 1⁄2 avacodo
- 3 T silken tofu
- 1 c oj or juice of choice (no sugar added is best)
- 1⁄4 c organic, whole grain breakfast cereal
- 2 T flaxseed oil (optional)
- 3 ripe strawberries
Instructions
Ingredient amounts are definitely approximate. Just throw the stuff into the blender until it looks like a smoothy. If it's too thick, add juice. Too thin, add fruit. Easy.
Your kid will go insane over this stuff. As good as it tastes, it's packed with protein, fiber, essential fatty acids, vitamin C, potassium, tons of good stuff. (but they don't need to know that) I use the leftovers to make popsicles, which are a central part of my 18 mo girl's existence at this point. That and bubbles... and dogs.

this just went to the top of my recipe list for breakfast ideas for the tiny one in the house. we've been whipping up breakfast fruit smoothies for him for about a week or two now and am excited to add this recipe to the menu. and thanks for the idea of doing popsicles out of the left-overs!! that's an idea that didn't occur to me that seems highly appropriate, considering Summer is here!
